The whisky is also made even more unique by virtue of its production in a continuous still rather than a pot still. This method resembles that of bourbon production, and yet while many first timers may expect the flavour profile to then also slightly resemble bourbon, it doesn’t even faintly come close in any, way shape or form. Indeed Greenore is a whiskey incomparable to any other whiskey on the market in aroma and taste, with a production technique so unusual that it is the only one of its kind anywhere in the world. Whatever the guys at Cooley were trying to achieve, they nailed it. At any rate, whatever we make of the trade gossip, it’s safe to say this month’s whiskey is an absolute rarity and privilege to taste, and the annual limited edition release of only 6000 bottles is highly sought after.\u003c\/p\u003e\u003cp\u003eAged exclusively in first fill flame charred American oak ex-Bourbon casks, The Irishman 12 Year Old Single Malt is triple distilled, natural non-chill filtered and bottled at 43% ABV. The wood is extremely hard to work with and casks are sourced from 200-year-old trees in the remote forests of Hokkaido Island in northern Japan. It’s also porous so it leaks woefully and as a result is rarely used for whisky, even in Japan. However, there’s a pay-off for those who dare. The porous wood allows more contact with the liquid, and these open-grained, lightly-charred barrels amplify flavour more than other oak while layering on sandalwood, coconut and much more vanilla. One thing led to another, the stout was delicious, and Jameson ended up with a few freshly stout-seasoned casks sitting around. You all know how the story goes.
