Cranachan for Burns Night Supper

Robert Burns is Scotland’s national bard and one of the world’s greatest poets. His life and work are celebrated across the world on his birthday, January 25, with a ‘Burns Supper.’ So, rally some mates, choose your favourite whisky, whip up some haggis, neeps and tatties and a serve of Cranachan — Scotland’s classic dessert. You’ll only need a handful of ingredients and it’s super easy to make. So, put on your apron and lets get cranachan!

Ingredients:

2 tbsp medium oatmeal
300g fresh raspenrries
A pinch of caster sugar
350ml double cream
2 tbsp honey
2-3 tbsp of whisky — your choice

Method:

 1. First step, toast the oatmeal. Get a baking sheet and grill it until it smells toasty and nutty and it begins to change colour.
2. Purée half the raspberries by putting them in a food processor or simply use a fork. Add the caster sugar to sweeten.
3. Whisk the double cream until just set — but make sure you don’t over-whip the cream. Then add the honey and the whisky.
4. Stir in the oatmeal and whisk and until it’s just firm. To assemble, get four serving dishes and alternate layers of the cream with the remaining whole raspberries and and the purée. Pop it in the fridge and allow it to chill before serving.
