As a result, it may develop a light haze with the addition of water or if kept at a cold temperature. This haze is a natural characteristic of whisky that is unchill-filtered.\u003c\/p\u003e\u003cp\u003eKnockdhu has a racked warehouse and a two-storey dunnage warehouse. The dunnage warehouse has the optimum conditions for maturing Scotch whisky. Thick walls made from the local granite ensure a very stable temperature in the depth of winter, sometimes -20 outside. The low roofs and earth floors keep the humidity very high, causing water to enter the cask during maturation, resulting in a drop in strength over the years. Its intereting to note that in Tasmania, where the humidity is low, the strength increases over the years as alcohol eveporates out of the cask. The current warehouses hold 6000 casks.
