You can’t ask for much more, one year in.\u003c\/p\u003e\u003cp\u003eWe’ve been working with Eddie to celebrate this recognition of their hard work with something next level: the distillery’s first ever fortified cask whisky, using three rare 250L Tawny Port hogshead wet-fills from Barossa producer, Dutschke.\u003c\/p\u003e\u003cp\u003eAs Eddie says, this is their “richest whisky yet – the casks are just rock and roll”.\u003c\/p\u003e\u003cp\u003eIt started with a bespoke Stone \u0026amp; Wood Australian Pale Ale wort that’s fermented onsite at the distillery. Peter Bailey’s last ever copper pot stills, traditional distillation, Mt Warning volcanic water (which Eddie calls “the wettest water you’ve ever tasted”) and short cut windows provide a clean, classic malt backbone and oiliness, along with distinctive tropical characters of green mango and custard apple in the spirit.\u003c\/p\u003e\u003cp\u003e“We want our spirit to shine, in the same way that separates Bruichladdich from other whiskies,” says Eddie. “But we also want to show off our own DNA – I do not want to be a Bruichladdich; it’s so important that we’re Cape Byron.”\u003c\/p\u003e\u003cp\u003eThe chosen wet-fill Dutschke tawny casks accentuate and marry with those flavours wonderfully.\u003c\/p\u003e\u003cp\u003eBuckle up for flavours of \u003cem\u003e\u003cstrong\u003ezesty orange\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003ejuicy red jubes\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003efruitcake\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003espicy oak\u003c\/strong\u003e\u003c\/em\u003e, leading into a rich palate of \u003cem\u003e\u003cstrong\u003eapricot\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003eorange\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003etriple-choc caramel biscuit\u003c\/strong\u003e\u003c\/em\u003e.
