First is the full farm-to-bottle ethos: all the barley is grown on the estate and only 100 casks are filled each year. Releases are seasonal, because distillation only happens in the winter and summer – the rest of the time, the farm’s actually working as a farm.\u003c\/p\u003e\u003cp\u003eThe other reason it’s become a cult favourite is the quality of the spirit that’s coming off the stills. Daftmill know how to knock up a dram. The combination of that estate-grown barley (this release is Concerto) and ridiculously long ferments (up to 100 hours) gives a spirit that’s super fruity and textured, with a malt character and presence that stands apart from even the farmiest contemporaries.\u003c\/p\u003e\u003cp\u003ePut that spirit into first-fill casks and you’ve got a recipe for success.\u003c\/p\u003e\u003cp\u003eAuction prices for this Lowlands distillery shows how massively sought-after they are: early bottles went for north of £1000 (that’s $1850+ AUD) at auction in the years following their first release, and they’ve been on our bucket list to bring to the Club ever since.\u003c\/p\u003e\u003cp\u003eThis single vintage release began its journey in Daftmill’s farm’s South Fields, as Concerto barley harvested on 2nd and 3rd September 2011. After being malted in the nearby town of Alloa, it was distilled in the summer of 2012 (late July and into August), and matured entirely in 23 first-fill American oak ex-Bourbon casks. Finally, the single malt was vatted and bottled at the age of 12 years and 11 months without chill filtration or any added colour in June 2025.\u003c\/p\u003e\u003cp\u003eThe results? A sublimely textured small-batch delight with notes of \u003cem\u003e\u003cstrong\u003elemon drizzle cake\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003ehoneyed beeswax\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003ecustard\u003c\/strong\u003e\u003c\/em\u003e with \u003cem\u003e\u003cstrong\u003ecardamom\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003esoft nutmeg\u003c\/strong\u003e\u003c\/em\u003e – for those who get in fast enough to secure a bottle, that is.\u003c\/p\u003e\u003cp\u003e300 bottles of \u003cstrong\u003eDaftmill Summer Batch Release 2012\u003c\/strong\u003e landed on Aussie shores, just for Club Members.
