That peat is sourced directly from Scotland; as Dan explains it, it’s “nothing like Islay, but has a hint of saltiness that gives it the really nice earthy, salty-savoury DNA that Highwayman is known for.”\u003c\/p\u003e\u003cp\u003eCoupled with the dry white wine notes of Fino Sherry (a youthful, deliciously dry and nutty Sherry), we’ve got a limited edition bottle of \u003cem\u003e\u003cstrong\u003emaple bacon\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003emarmalade\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003eroasted coffee\u003c\/strong\u003e\u003c\/em\u003e with a gluttonous finish of \u003cem\u003e\u003cstrong\u003ecampfire marshmallow\u003c\/strong\u003e\u003c\/em\u003e, set at 55% ABV. Dan’s been on the whisky scene for a couple of decades now, working across the globe for Japan’s Yamazaki, the USA’s Maker’s Mark, and Scotland’s Benriach.
