It was all lightly peated as well — using peat from the Tassie highlands — while those notes were hidden by the cask influence.\u003c\/p\u003e\u003cp\u003eNot this one. You won’t have tasted anything like this one-off Overeem before.\u003c\/p\u003e\u003cp\u003eCasey Overeem himself chose a standout refill Sherry cask to beautifully frame and showcase the delicate peat influence.\u003c\/p\u003e\u003cp\u003e\u003cem\u003e“This cask delivered such an exceptional whisky in 2013, and I believed it still had more to give. 10 years later I'm thrilled I decided to refill it,”\u003c\/em\u003e Casey said.\u003c\/p\u003e\u003cp\u003eBottled at 59.5% ABV, non-chill filtered and with natural colour, expect glorious rich layers of \u003cem\u003e\u003cstrong\u003ehazelnut praline\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003echewy toffee\u003c\/strong\u003e\u003c\/em\u003e, \u003cem\u003e\u003cstrong\u003enougat\u003c\/strong\u003e\u003c\/em\u003e and \u003cem\u003e\u003cstrong\u003edried plum\u003c\/strong\u003e\u003c\/em\u003e, with delicate \u003cem\u003e\u003cstrong\u003eTasmanian highland smoke\u003c\/strong\u003e\u003c\/em\u003e.\u003c\/p\u003e\u003cp\u003ePrecious few bottles were yielded from this single cask, and Overeem is incredibly popular.
