Highland Park 16 Year Old Michelin Star Edition
The world’s first Michelin starred whisky? A geek-spec, sweet smoke Highland Park with their first ever use of Swedish oak is here in limited edition form.
United KingdomOverview
Highland Park have elevated their old-school sherried style with geek specs and a limited edition twist: the distillery’s first ever use of fruity, spiced-cola-like Swedish oak casks.
This one-off limited edition checks off Michelin’s five universal criteria for giving a star:
- Impeccable spirit and cask-sourcing for quintessential HP character = ingredient quality
- Highland Park’s trademark oily sweetness and heather peat smoke = harmony of flavours
- Perfect integration of rare Swedish oak casks = mastery of technique
- Been making classic, old-school sherried single malt since the 70s = consistency over time
- Limited edition collab with the world’s only 3 x 3 Michelin star chef, a hardcore whisky geek = chef’s personality shines through
Unusually, this one-off expression is being launched worldwide with no tasting notes attached. Instead, Highland Park and Michelin star chef Björn Franzen wants to erase any pre-conceived ideas of what the whisky will be before you uncork this beauty. They’ve even included a set of 16 prompts and questions with every bottle so you can really mull over the liquid with each sip.
All that aside, it ultimately just ticks all our boxes for a proper single malt Scotch: 16 years old, floor-malted, bottled at a creamy 48% ABV, with no chill filtration and no colour added. As well as the Swedish oak, the incorporation of Highland Park’s classic Sherry and American oak cask regime ensures this limited edition is delivering powerful cask character. Members, this is HP in very fine form.

Highland Park's History
While the Orkney’s locals had been honing their skills for a few centuries, it wasn’t until 1798 that an official distillery opened on the islands. But who it was that actually founded it is something still argued about in pubs today. It was either Magnus Eunson, church officer and butcher by day, and illicit distiller and whisky smuggler by night, or the honourable farmer David Robinson. What we do know, is that the distillery’s ornate iron gate has the year 1798 written on it and that’s when the distillery went into legal production, regularly paying duty on the spirit produced on site, and in 1826 Highland Park became one of Scotland’s first distilleries to get a license to make whisky.
