Waubs Harbour Distillery
Waubs Harbour distillery was established in 2018 by Tim, Bec and Rob Polmear, as they set out to make a truly distinctive maritime whisky distillery.
With Rob’s experience as Lark’s Head of Production & Overeem’s Head Distiller, this distillery rocketed out of the gates with immediate success. Their first three releases each scored a Gold Medal or higher at the World Whisky Masters in 2023, while their Waubs Original brought home a Category Winner Gold for Small Batch Single Malt at the World Whiskies Awards 2024.
The distillery itself sits in an ex-oyster hatchery in Bicheno, on the wild east coast of Tasmania.
“We grew up here, and we live and breathe this oceanside distillery,” says Rob, “and it becomes a part of your lifestyle as well as your production.”
The premium craftsmanship and distinctive seaside character of Waubs has forged a natural cult following around the nation, with their limited editions selling out quickly and consistently
“Here you're really exposed to the wild Tasman seas, and very exposed to the salinity that we're after, which ends up making its way into the product and having an influence on the taste. That was really the reason we started Waubs Harbour.”
With coastal vibes akin to Glen Scotia or Old Pulteney, their delicious malt is full of unique character and punching well above its weight category.
With these early releases showing impressive oiliness and balance, we’re pegging Waubs Harbour as one to watch, and to buy their bottles on sight.
