Waubs Harbour Oloroso Rusted Casks

Waubs Harbour accepted the sequel to their original Mission: Impossible, rusting more casks above the ocean for the delight of Club Members around Australia.

“Maritime Tasmanian single malt whisky made our way” is their mission statement, after all. Taking the idea of coastal maturation to the extreme once again, this time Waubs has given the Rusted Casks an Oloroso twist.

“The Oloroso finish focuses more on the old woody oak and robust darker fruit aspects unlike the OG’s sweeter and kitchen spice driven ex-Bourbon influence,” says Waubs Head Distiller Rob Polmear, “but both have the underlying delicious sweet stone fruits from the Apera.”

For this one-off batch exclusive to the Club, Waubs has taken its famed Apera Sherry French oak whisky and given it a final maturation in Oloroso Sherry casks that have been rusted to oblivion, suspended mere feet above the ocean. Worth it? You bet. At 51.7% ABV, bottled with no chill filtration or added colour, the initial sweetness of the Apera has toned down into custard-like creaminess and bunches of fruit. Expect waves of salted caramel drizzled over fresh raspberries and slow-stewed apple.

“Using a very old Oloroso cask is often hard because they can be a little drying at times, knowing that some of the depth and richness comes at a price. I had to preselect the Apera to be overly sweet, almost sickly, knowing what was coming,” says Rob. “I managed to grab just the right bitter sweet by doing this, tracking maturity week by week, but also managed to get the best parts of the Oloroso's fruit and oak profile in what I think is perfect balance.”
