Oldest ever Aussie single cask released
Huge Aussie whisky news. Sullivans Cove has released Australia’s oldest whisky to market. To celebrate its 30th anniversary, Tassie distillery Sullivans Cove has released HH0004 — a 24 year old single-cask.
Laid down during the distillery's fifth year of operation, HH0004 spent 24 years slowly maturing in the distillery's bond store. The Sullivans Cove sensory panel tasted HH0004 nineteen times in the past three years alone to "ensure this cask was bottled at its peak of flavour and harmony."
Managing Director Adam Sable describes the release as a “a true labour of love and patience,” and embodies Sullivans Cove’s “obsession with producing the best whisky possible without compromise.
“Aussie whisky has really come of age, and we’re starting to see some truly extraordinary age statements coming out of the county’s founding distilleries,” says Seamus Carroll, the Club’s Head of Whisky. "Sullivans Cove recently released a 22-year-old single cask, and in October last year the Club released Hellyers Road 21 Year Old Single Cask. It’s a really exciting time for Aussie whisky.”
Only 335 bottles of Sullivans Cove HH0004 have been released.
