“Maritime Tasmanian single malt whisky made our way” is their mission statement, and Waubs Harbour has deployed Mission: Impossible with this limited edition Club exclusive to make their most coastal maturation yet.

With coastal vibes akin to Glen Scotia or Old Pulteney, this delicious malt is full of unique character and punching well above its weight category.
“This whisky already had kitchen spice and stewed fruits that work so well with our coastal character,” says Waubs Head Distiller Rob Polmear, “and just to amp it up, we wanted to get it as close to the ocean as possible and see what that environment did — so we put it in our most extreme bond store conditions.”
Matured in some of their richest aged Apera Sherry French oak before a final maturation in toasted ex-Bourbon American oak casks mere feet above the ocean (which has never been done before), expect waves of stewed apricots, salted caramel sauce with a hint of orange zest and rounded out with richly spiced oak. The finish is full of syrupy poached pear, burnt brown sugar and crème fraîche, with the whisky’s oiliness is kept intact thanks to non-chill filtration and 52% ABV, while it’s rocking a natural searing bronze colour.
“You get the salt and caramel at the end that comes through together,” says Rob. “The salt cuts through the sweetness so you can amp up flavour intensity without going overly sweet.”

Waubs Harbour Distillery's History
Waubs Harbour distillery was established in 2018 by Tim, Bec and Rob Polmear, as they set out to make a truly distinctive maritime whisky distillery.
With Rob’s experience as Lark’s Head of Production & Overeem’s Head Distiller, this distillery rocketed out of the gates with immediate success. Their first three releases each scored a Gold Medal or higher at the World Whisky Masters in 2023, while their Waubs Original brought home a Category Winner Gold for Small Batch Single Malt at the World Whiskies Awards 2024.
The distillery itself sits in an ex-oyster hatchery in Bicheno, on the wild east coast of Tasmania.
“We grew up here, and we live and breathe this oceanside distillery,” says Rob, “and it becomes a part of your lifestyle as well as your production.”

“Here you're really exposed to the wild Tasman seas, and very exposed to the salinity that we're after, which ends up making its way into the product and having an influence on the taste. That was really the reason we started Waubs Harbour.”
