Roasted Salmon Fillets with Irish Whiskey
Our mouths watered when we saw this superb recipe posted on food.com. Roasted salmon fillets with Irish whiskey—super simple and super-delicious (feel free to swap the Irish for Scotch whiskey).
You’ll only need eight ingredients, and most of them you’ll already have in the cupboard. It’s a nice twist on the traditional Sunday roast, and you can choose your favourite sides to serve it with (we recommend garlic butter-drenched roast vegies, grilled asparagus or a crunchy salad).

Here’s your list of ingredients:
2 tablespoons honey
¼ cup cider vinegar
¼ cup Irish whiskey (your choice)
2 teaspoons chopped fresh thyme
1 ½ teaspoons grated lemon zest
2 tablespoons vegetable oil
Salt and freshly ground black pepper
4 salmon fillets (175 g)
Directions:
Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate for 1 hour on the counter, or 4 hours refrigerated.
Preheat oven to 230°C. Remove salmon from marinade and place on a rack over a roasting pan. Bake for 10 to 12 minutes, basting once with the marinade or until golden and white juices are just beginning to appear.
Serves four.
